Good Eats: Paleo Banana & Strawberry Crepes

I finally did it!  I've been craving crepes so much lately, that I had to find a way to eat them without the guilt of all the powdered sugar and hazelnut spread (sugar heaven).  I cooked up some crepes today that are PALEO FRIENDLY! Woo hoo!  And they taste amazing, too!

Paleo Crepes
Ingredients for batter:
4 Eggs
1/2 Cup Almond Flour (Almond Meal will do just fine - it's actually what I used but I know Almond flour will give it more of a smoother texture)
2 teaspoons of honey
1/2 teaspoon vanilla
pinch of salt
1 teaspoon of olive oil (and no more than that)
1/4 cup measuring cup

Ingredients for filling:
Two large bananas (cut into slices)
5-6 strawberries (cut into slices)
Pinch of cinnamon
Honey (to drizzle)

Instructions:
In a mixing bowl, beat the eggs.  Continue beating the eggs while adding in the almond flour, honey, vanilla and pinch of salt.  Everything should be well blended.

Heat an 8 inch skillet on medium heat.  Add olive oil and using your 1/4 measuring cup, scoop out the batter and add it to the skillet.  Swirl the mixture around in the skillet so that there is a nice, even layer of batter.  Should take a minute or so to brown, and you can use your spatula to flip it to the other side.

Remove crepe from heat to a plate.   Add filling and close crepe like a burrito.  DONE!

Makes up to 8-10 crepes (but if you use a larger skillet, you will make half the size)

I didn't add oil to my first crepe (yikes) and got a browner bottom (far right - but it was very good)!  The next crepe I added WAY too much oil (hence, the lighter color - middle) and the last crepe was just right.  Play around with it until you get what you desire.  I also had batter left over, I so I will make the rest later.  It preserves well in the fridge.

  1. I've tried numerous paleo crepe and pancake recipes online...and they've pretty much all been gross or just so far off the mark they aren't worth the effort. These are not only super simple, but are delicious. This recipe is a keeper!
