As if the Zucchini Bread wasn't one of my best found recipes, I stumbled across this one and am in LOVE!
With a little bit of magic and ingredients, I whipped up a loaf of Banana Nut Bread - Paleo style. Not only did I make the bread, but I made french toast from it! NOM!!!

Ingredients
Almond Meal (1 cup)
Coconut Flakes (1/4 cup)
Baking Soda (1/2 tsp)
Baking Powder (1/2 tsp)
Bananas (3 small-medium, ripe, mashed)
Natural Maple Syrup (1 tsp)
Cinnamon (2 tsp)
Eggs (2, omega 3 enriched if possible)
Vanilla Extract (1/2 tsp)
Walnuts (1 cup chopped/crumbled)
I pretty much followed this recipe, except I didn't have baking powder, so I subbed it for baking soda. I also added 1/4 tsp of coconut oil and my walnuts to the mixture last and folded those in. Once the bread was baked, I moved it to a cooling rack.
3 Eggs
1/2 c Coconut Milk
1 t Cinnamon
Pinch Nutmeg
1 T Vanilla
Coconut Oil or Ghee, for frying
Instructions
Beat the eggs, coconut milk, spices, and vanilla in a shallow dish. Dip the bread slices in the batter and allow excess to drip off.
Fry over medium heat in coconut oil or butter until golden brown. Top with butter and cinnamon.

Preheat oven to 375 degrees and grease bread pan with coconut oil or olive oil. Mix together all of the wet ingredients in a bowl. In a seperate bowl, mix together all of the dry ingredients. Combine the two mixtures together. Put in oven and let bake for 25-30 minutes.
Paleo French Toast

Ingredients
5-6, 1-inch slices of a Paleo-Friendly Bread3 Eggs
1/2 c Coconut Milk
1 t Cinnamon
Pinch Nutmeg
1 T Vanilla
Coconut Oil or Ghee, for frying

I altered this recipe. I used 2 eggs, 1/4 cup Almond Milk (that's all I had), 1/4 tsp Vanilla, a dash of nutmeg and a dash of salt. I only made two slices because that's all I could eat, lol, but I still had batter left over. Additionally, I topped mine with fresh fruit (bananas and blueberries) instead of cinnamon and butter! Oh, and a drizzle of maple syrup! Mmm.
I would suggest letting the bread mature for one-two days before trying this recipe, as the bread was soft and a little hard to manipulate. BUT HEY, where there is a will, there is a way! I had my french toast!
