Good Eats: No Bake Paleo Cookies

The Paleo Diet doesn't have to be restricting and boring, that's why I am so happy that the boy found this recipe for cookies.  This recipe has a healthy serving of nuts which attributes to loads of protein.  Just remember to be careful eating these cookies - they are healthy, yes, but nuts have a high fat content, so eat them in moderation.

No-Bake Cookies
Ingredients
1 cup finely chopped almonds, pecans or walnuts
11/2 cups semisweet or dark chocolate chips
1/2 cup almond butter
1/3 cup olive oil
1/3 cup honey
2 teaspoons ground cinnamon
1 cup shredded unsweetened coconut flakes


Preparation
1. Line a cookie sheet with parchment paper.

2. Process nuts in a food processor until very finely chopped (almost ground). Set aside.

3. Combine chocolate, almond butter, olive oil and honey over low heat in a medium saucepan 2 to 3 minutes or until it has a smooth consistency and chocolate is melted. Remove from heat and stir in cinnamon, coconut and nuts.

4. Drop by tablespoon or teaspoonfuls onto parchment-lined baking sheets. Refrigerate at least 30 minutes or until they harden. Store in an airtight container in the refrigerator.

We ditched the chocolate chips because it is not in our diet guidelines.  We also used walnuts and don't own a food processor, so we mashed them up in a bag.  Instead of finely chopped walnuts, we had coarsely chopped walnuts.  Next time, I will decrease the amount of olive oil to 1/4 cup since almond butter has oil already in it. 

Other than that, these cookies are AMAZEBALLS!  I dare you to try them!
